Instructions:
Preparation time: 15 minutes to mix - 1 hour to prep and bake
Suggestion: Work quickly
1 lb. water, (about 2 cups), cool
1 tsp. sugar
1 tbsp. dry yeast
1.75 lb hi-gluten or bread flour
2 tbsp. olive oil
1 tbsp. kosher salt
Combine the water, sugar and yeast let it sit for 15 minutes, add flour and salt and mix 1 minute on low, and add the oil. Continue to mix for 9 minutes on low. Place in lightly oiled bowl, cover and refrigerate overnight.
Next day---
Turn out on to a lightly floured surface, divide in two and dough balls.
Shape, and top with your favorite sauce and toppings. Bake at 500 degrees F. for about 8 minutes.
Freeze the remaining piece for another time or bake it as bread.
