1 cup brown sugar
1 cup granulated sugar
1 cup shortening
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 cups flour
1 cup coconut
1 cup oats
3 cups quick oats
Cream sugar, shortening and eggs. Add vanilla extract.
Sift together baking soda, baking powder, salt and flour. Add to creamed mixture. Add coconut and oats. Mix all ingredients. Roll into small balls the size of walnuts. Place on cookie sheet. Press down with fork. Bake at 375 degrees F until slightly brown.
Makes 4 dozen.
