2/3 cup butter
1/2 cup apricot preserves
1/4 teaspoon lemon juice
3/4 cup shredded coconut
2 cups quick cooking oats
Finely ground nuts
Beat butter until creamy. Add apricot preserves and lemon juice. Stir in coconut and oats. Shape into balls and roll in finely ground nuts. Keep refrigerated.
