Amount/Measure/Ingredient:
25g Bulgur Wheat
500g Lamb, Ground
1 tsp Cumin
1 tsp Coriander
1
tsp Paprika
1 tsp Salt
1 clove finely chopped Garlic
For frying, Olive
Oil
4 Buns
2 cup Grated English Cucumber
200g Greek Yogurt
2 tbsp
Fresh Mint Leaves
Preparation:
Place the bulgur into a pan, cover with water and simmer for 10 mins. Drain
really well in a strainer, pressing out any excess water and cool on a sheet
pan.
To make the Tzatziki; peel, seed and grate, squeeze dry and discard
the juice from the cucumber, then mix into the yogurt with the chopped mint and
a little salt.
Combine the bulgur with the lamb with spices, garlic and
seasoning, then shape into 4 burgers. Brush with a little oil and pan fry for
about 5 mins on each side until cooked all the way through. Serve on the buns
(toasted if you like) with the tzatziki, sliced tomatoes, onions, coriander and
a few mint leaves. You many add a few chopped romaine leaves if you like.
