Baked Scallops w/ Olive Oil & Thyme

Preparation time: about 20 minutes
7 ounces Scallops, de-bearded, washed and dried
1 tbsp shallots, chopped
1/2 tsp thyme, chopped
1 ounce olive oil
1 ounce butter, melted
1 pinch salt
2-3 grinds black peppercorns
1 ounce white wine, chardonnay
1 tbsp. parsley, chopped
1 piece lemon wedge
Place the scallops in a ceramic table ready shallow baking dish, sprinkle with shallots, thyme, drizzle with olive oil, butter, wine and pinch of salt. Place in a 375 degree F. oven for 10-12 minutes.
Remove and sprinkle with parsley.
Serve in the casserole dish a wedge of lemon.
