Preparation: Sift together the flour and baking soda; set aside. In a large bowl, beat the butter, sugar and vanilla until creamy. Add the egg and beat until light and fluffy; gradually blend in the flour mixture. Divide the dough in half; wrap in plastic wrap and chill for one hour n the refrigerator. On a floured surface, roll half the dough to 3/16 inch thickness. With a floured cookie cutter, cut out the cookies. Roll out remaining dough, re-rolling scraps as necessary. Place the cookies on un-greased baking sheets. Bake at 375 degrees F. for 8 to 10 minutes or until light golden. Remove to wire rack to cool. Decorate with icing and other items as desired.
