Triple Decker Turkey Club Sandwich

Serving size: 1 sandwich
Preparation time: about 10 minutes


3 slices white bread toasted
3 tablespoons mayonnaise
4 slices tomato cut 1/4 inch thick, about 2 inches in diameter
1 leaf iceberg lettuce, about 4-5 inches square
3 slices bacon cooked crisp
4 ounces cooked turkey (white meat) about 4 slices, 1/8 inch thick, 3 inches wide and 4 inches long


Setup the ingredients by cooking the bacon, slicing the turkey and tomatoes and cutting the lettuce. Toast the bread and spread 2 teaspoons of mayonnaise on one side. Top evenly with 2 leaves of lettuce, sliced tomatoes and the bacon. Place a second piece of toast on top of all and spread the top side with 2 teaspoons of mayonnaise. Place the turkey on the bread followed by the remaining 2 leaves of lettuce. Spread the last bit of mayonnaise on the third slice of toast and place it on the sandwich, mayonnaise side down on the lettuce leaves. To serve slice the sandwich in half on the diagonal with a serrated or very sharp knife being careful not to mash down the ingredients.

Hint* use a sawing motion with the knife while holding the sandwich in place with the tips of your fingers as you cut. If you assemble the sandwich quickly the toast will still be slightly warm when you eat it.
